- 200g digestive biscuits (Crushed)
- 100g Unsalted Butter
- Melt Butter and mix in crushed Biscuits
- place mixture in a cake tin and press down
- 142ml single cream
- 3 sheets leaf gelatin
- 300g full fat cheese
- 100g caster sugar
- 2 tsp lemon juice
- zest of lemon
- 300g strawberry's
- 142 ml double cream
- Bring single cream just to the boil and add gelatine and allow to cool down
- Beat the cheese in a bowl with the sugar, lemon juice and zest until smooth and creamy then fold in chopped strawberry's
- Now add the cooled down cream and gelatine mix to this
- lightly whip the double cream to soft peaks and fold in, pour over biscuits and place in fridge and chill for two and half hours
