Strewbery Cheese Cake

  • 200g digestive biscuits (Crushed)
  • 100g Unsalted Butter
  1. Melt Butter and mix  in crushed Biscuits
  2. place mixture in a cake tin and press down
  • 142ml single cream
  • 3 sheets leaf gelatin
  • 300g full fat cheese
  • 100g caster sugar
  • 2 tsp lemon juice
  • zest of lemon
  • 300g strawberry's
  • 142 ml double cream
  1. Bring single cream just to the boil and add gelatine and allow to cool down
  2. Beat the cheese in a bowl with the sugar, lemon juice and zest until  smooth and creamy then fold in chopped strawberry's
  3. Now add the cooled down cream and gelatine mix  to this
  4. lightly whip  the double cream to soft peaks and fold in, pour over biscuits and place in fridge and chill for two and half hours
