- 200 ml sunflower Oil
- 4 Large eggs
- 200g c Sugar
- 200g grated Carrot
- 300g SR Flour
- ! tsp Baking powder
- 1 level tsp ginger
- 1 level tsp mix spice
- 75g chopped walnuts
- Place oil, eggs and sugar in bowl and mix till well combined
- Fold in grated carrot
- Add Four, BP, ginger and mix spices and fold in
- Add Chopped walnuts
- Divide mixture between 2 x 8" Tins
- Bake for approx. 35min, gas MK4 / 180c / 350f till cooked
- Filling
- 50g soft butter
- 50 - 100 g icing sugar
- 250g cream cheese
- 2 drops vanilla flavoring/essence
- Mix butter, icing sugar and vanilla essence together
- Add cheese and mix
